Transform Spinach into Something Sensational
I have had many request for My Lebanese Kitchen's recipe for this simply yet absolutely delicious spinach dish with burghul (cracked wheat).
Spinach with Burghul
Serves 6 as side dish
Ingredients
1 bunch of spinach, cut roots off and disregard, cut remainder into three sections length ways – i.e leaves + stalks, wash two or three times to remove all sand/dirt
1 brown onion quartered and sliced
4 cloves of garlic halved then sliced
½ teaspoon of salt
¼ teaspoon black pepper
¼ teaspoon of mixed spice
2 tablespoons of olive oil
¼ cup of fine brown burghul washed - OPTIONAL
Method:
Heat oil in a large fry pan until hot, place onions in and cook until soft them add the garlic and continue to cook until onions are caramelised. Reduce to medium heat add spinach, salt, black pepper, mixed spice and burghul and toss until spinach is half cooked, approximately 3 to 4 minutes, the spinach should still be a lovely fresh green colour, adjust flavour if needed. Remove from heat and place in a serving bowl.
